These gorgeous chewy bars make a great late morning healthy snack, or a breakfast on the go option. They are bursting with magic, in the form of seeds, nuts and dried fruits. Once baked they have a very short shelf life before literally disappearing in a puff of smoke. I have no idea which part of the recipe leads to this act of disappearance or spontaneous combustion…. but for what its worth here’s the recipe, good luck with saving some for tomorrow!
50g coconut oil
2 tbs smooth peanut butter
2 ripe bananas mashed
1 apple, peeled and grated
250g organic porridge oats
85g of mixed seeds and nuts (sunflower, pumpkin, chopped walnuts or pecans)
185g dried fruit (cranberries or raisins, chopped apricots)
2 tbs spoons of organic honey
1 tsp of ground cinnamon
Preheat the oven to 160 degrees centigrade
Use some of the coconut oil to grease the base of a tin or glass Pyrex dish
In a bowl mix together the oats, mixed nuts, seeds and fruit
In a pan gently heat the coconut oil, peanut butter and honey until its melted. Add the apple banana and 100ml of hot water and mix together.
In a large bowl add the oats, fruit, seeds and cinnamon, pour in the warmed mixture and combine well.
Spoon out onto your tin or Pyrex dish. press the mixture down into the dish and bake for 50-55 minutes.
Leave to cool in your tin or Pyrex dish. Cut into bars, for everyone to enjoy.. and wait for it…. puff their gone!
if you manage to save any, it will keep for 2-3 days in an airtight box in the fridge
