These pancakes are very quick and easy to make, are low fat, low GI, packed with protein and taste amazing. They’re a perfect start to a wellbeing weekend, after a busy week. They’re a great pre exercise energy boost and they taste like you’ve indulged in a delicious treat, and they actually a wonderful eating “clean” recipe. My wee ones love to “help” make them, and a big mess!.

Ingredients

Recipe serves two

  • 2 bananas (mashed with a fork, my wee ones love helping with this)
  • 2 free range eggs (beaten)
  • 1/2 cup rolled oats (blitzed in a blender)
  • ¼ of a teaspoon of ground cinnamon
  • Tiny pinch of salt
  • Coconut oil, as required

Method

  1. Combine all the ingredients in a bowl until the mixture is smooth
  2. Allow to rest for a short while to thicken
  3. Heat a non-stick pan over a medium heat, with a small amount of oil (I used coconut oil)
  4. Add the batter until golden brown, attempt the flip and brown on the other side
  5. Serve with fruit; blueberries, raspberries, bananas, strawberries, natural yogurt
